报告题目:复杂高内相乳液的研究进展/ The Developments of Complex High Internal Phase Emulsions (HIPEs)

Abstract: Droplet geometry and composition can determine the properties and functions of an emulsified system, which makes complex emulsions (e.g., core-shell droplets and Janus emulsions) increasingly important in various application fields. High internal phase emulsions (HIPEs) were considered as an important functional soft material which has been the focus of intense development effort, but their fundamental attributes have hardly been altered at either the microcosmic or macroscopic level. Here, we realized both double HIPEs and Janus HIPEs for the first time. Compared with their conventional counterparts, these complex HIPEs feature microscopic patterns with short-range anisotropy, and exhibit non-Newtonian pseudoplastic flow behavior. We investigated their stabilization mechanism, and discussed the key factors dominating their formation. By taking advantage of their response to a high-pH subphase, we successfully obtained an interfacial film of oil droplets, which can be one-droplet thick and exhibit a gas-liquid phase transition under compression. The created complex HIPEs can greatly expand the applications of liquid materials, and the obtained interfacial films of droplets represent an important step towards producing 2D soft materials that can be broadly applied to biological processes.
